In a pan, melt 2 T. butter with 3 T. coconut oil on stovetop. (You could also use ghee instead of the butter/ coconut oil combo). Transfer to mixing bowl. Mix in 1/4 cup maple syrup or honey, your choice. Mix in two eggs. Mix in 1 t. pure vanilla extract.
In a separate bowl, combine 1 1/2 cups almond flour, 3 tablespoons coconut flour, 1/4 teaspoon sea salt, and 1/2 teaspoon cream of tartar.

Add your dry ingredients into the bowl with your wet ingredients, and stir them up to combine. Shake a bunch of cinnamon onto a plate along with the granulated sugar of your choice, I use maple sugar or organic white sugar, sometimes coconut sugar. Form teaspoon size balls of the dough in your clean hands, and roll into the sugar/ cinnamon mixture.

Place onto cookie sheet at least an inch and a half apart from each other, and use the bottom of a cup or a jar to gently press balls into more of a cookie shape, be gentle, not too flat! I cover my cookie sheets with parchment paper to make clean up easy. Bake at 350 for 7-8 minutes… any longer than that and they burn very quickly on the bottom so please be careful!

The kids love these, and I love that they have such a nice texture… Just like grandma used to make.
